Healthy food needed, stat!

I think my brain has been feeling a bit overloaded on left over Halloween candy and take out meals.  I needed something fresh and healthy this evening! 

First up I roasted some parsnips in the oven with some olive oil, salt, pepper and some fresh ginger.  Parsnips are one of those vegetables that I really detested as a kid.  Now as an adult I’m trying a few new ways to cook them up to see if I can change my opinion on them.  After all, they are supposed to be good for you

While the parsnips were roasting up I made the other half of my meal – Tassajara Warm Red Cabbage Salad from 101 Cookbooks.  Red cabbage, raisins and feta cheese.  What’s not to like?  I followed the recipe, but added in a some sliced apples to the cabbage and sprinkled some pomegranate seeds on top.  Pomegranates just came into season so I’m going to have to see how else I can incorporate them into meals.DSCN1705

Wow, you eat some weird food ;p I think you hit 3 or 4 of my least favorite things all in 1 meal LOL!

I don't think I have EVER tried parsnips! Good for you! I need to find some healthy cookbooks, but nothing too crazy! LOL

Looks amazing! I love parsnips. They go really well with cinnamon/all spice.

I've been trying to cook with pomegranates too lately but keep finding the crunch/seed part weird in foods. It's fine on their own. Do you cut the crunch part out, or are you good with it?

Yummy! Good idea with the pom seeds. I'd like to find some new ways to use them.

I find that I enjoy most veggies that I didn't like as a kid as long as I roast them. (Hello brussels sprouts). I mean, who enjoys boiled ANYTHING?!

I say it looks too darn healthy to be good for you. I think I'll try Julies power bar's first.

I don't think I've ever in my life had a parsnip.
